Coconut Chickpea Rice

I made this Coconut Chickpea Rice for supper tonight (ingredients and recipe in the video description); it’s very good. It also makes it clearer why we once went to war over spices.

Trying this tonight! I don't have coconut oil, so may have to substitute that part...also subbing broccoli for the broccoli rabe. Pandemic grace.

Same here on both counts. It still worked out. I was very impressed with myself for having shredded coconut in the pantry.

Thanks for sharing this. I am trying to get us out of a food rut and love hearing new ideas for uncomplicated daily meals. I don't think I've ever used hazelnuts in a savoury dish, so will look for some next time I'm at the market. We go through a lot of smoked paprika in our house. By the way, is it easy to find good spices on the Island? (It wouldn't surprise me at all if you said there is now a high end spice emporium in Georgetown or Lake Verde, or somewhere like that.)

I was skeptical about the hazelnuts myself, but they turned out to be the killer ingredient. I bought mine “raw” at M. Vrac, and so toasted them in the oven for 15 minutes at 350 degrees first. Catherine willed me a flagon of smoked paprika, and I’ve been using it to excellent effect; it’s remarkable the number of recipes that call for it.

The Lake Verde Spice Emporium never came to pass, alas, but there are several places, beyond the Bulk Barn, to get spices: the aforementioned M. Vrac, out beside Best Buy, is the latest. There’s also Kate at the Farmers’ Market, and the Root Cellar. Sobeys has the usual brands in the baking aisle, but also has a line of organic spices on the edge of the produce section. For Asian cooking there are perhaps half a dozen Asian grocery stores, and one very good Indian grocery store, next to the Bank of Nova Scotia on St. Peters Road, which has amazing spices.

It would not surprise me to find an Etsy-based spice emporium in downtown Lake Verde.

I forgot about the recent burst of Asian grocery stores but I didn't know of the Indian grocery store! And of course, the Brighton Clover Farm would have some good za'atar and, I think, even sell sumac. If you ever need anything, let me know, Carlos House of Spice in Kensington Market is one of my favourite haunts, and they have small packets of pretty much everything. But it sounds like things are pretty well covered until the Lake Verde Spice emporium gets up and running.

Brighton Clover Farm is, indeed, my sumac connection. Although I now have a lifetime supply.

There’s also a new yet-to-open store in St. Avards, on St. Peters Road, that has a large banner in the window claiming it will be the largest Punjabi grocery store in the Maritimes.

That will be a great addition to the city. Charlottetown is becoming the city that Kensington Market used to be.

Follow up: It was delicious! We'll make it again--hopefully with all of the suggested ingredients. While sadly, we lacked the "killer ingredient" hazelnuts, the substitution of almonds was quite adequate.
